Pasta Pomodoro

This is a simple, rich tomato sauce, with plum tomatoes, garlic, chicken broth, red pepper flakes, basil, and balsamic vinegar. Serve over cooked pasta topped with freshly grated Parmesan cheese. Substitute the chicken broth for vegetable stock, and you have a quick-and-easy vegetarian meal for busy weeknights.

 

Lighter Pasta Pomodoro.

Ingredients:

  • 400 g spaghetti
  • 1 medium onion
  • 1 tablespoon of oil
  • 4 ripe tomatoes
  • 1 bunch basil

 

Method

  1. Boil the spaghetti in a large pot of water.
  2. Wash and coarsely chop the tomatoes.
  3. Cut the onion into thin slices and put it to cook with the oil in a frying pan.
  4. When is lightly browned add the tomatoes, basil and all the room.
  5. Let the sauce cook for at least 10 minutes.
  6. Make sure the spaghetti is cooked then drain and add the spaghetti to the sauce.
  7. Mix it for a minute and stir it several times because it tends to stick during cooking.
