Marinated Salmon

A sweet-salty marinade and unique fruit-filled sauce makes this recipe stand out. You marinate the salmon fillets in a homemade mixture of honey, soy sauce, and olive oil, cook in a grill pan or frying pan, and serve with a home made fruit relish for an easy salmon entree with a tropical twist. Pair with mixed greens and steamed couscous for a complete meal. This is quick, easy, and perfect.

Marinated Salmon With Relish

Ingredients

Ingredients

Salmon

  • 1 tablespoon honey
  • 2 teaspoons low-sodium soy sauce
  • 1 teaspoon olive oil
  • 1/4 teaspoon black pepper
  • 4 (6-ounce) salmon fillets (about 1 inch thick)
  • Cooking spray

Relish

  • 1/2 cup diced peeled mango
  • 1/2 cup cubed peeled kiwifruit
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup fresh orange juice

Method

Method

  1. To prepare salmon, combine honey, soy sauce, olive oil and black pepper in a large zip-top plastic bag.
  2. Add fish to bag then seal the bag and leave the salmon to marinate for 10 minutes, turning occasionally.
  3. While fish marinates, heat grill pan or large nonstick frying pan over medium-high heat.
  4. Remove fish from bag, discarding marinade.
  5. Coat pan with cooking spray.
  6. Add fish, and cook 5 minutes on each side or until the fish flakes easily when tested with a fork.
  7. While fish cooks, prepare the relish.
  8. Combine mango and the remaining ingredients.
  9. Serve over fish.

Tips

  • You could substitute the orange juice with some diluted lime juice and honey and serve with whole wheat couscous.
  • If you do not like cilantro, cut back on it or substitute parsley instead.
  • It would also taste good served over rice and with green beans or artichoke.
