Lasagne Soup

When it is cool outside, there is nothing nicer than to cosy up with a big bowl of soup. Comforting and perfect for a chilly evening, this really tasty lasagne soup has all of the great flavours and textures that are found in lasagne.

 

Lasagne Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 1lb lower calorie Italian sausage
  • 3 cloves garlic
  • 1 tbsp Italian seasoning
  • 2 tbsp tomato paste
  • 2 cups tomato sauce
  • 6 cups low sodium chicken broth
  • 1 lb pasta
  • 3-4 cups baby spinach, chopped
  • ½ cup ricotta cheese
  • ½ cup mozzarella
  • ¼ cup Parmesan cheese
  • fresh parsley, finely chopped

Method

  1. In a large soup pot, heat the olive oil over medium-high.
  2. Add onion and sauté for 3 minutes.
  3. Add Italian sausage and cook, crumbling it with a spoon, until it is no longer pink.
  4. Add garlic, Italian seasoning and tomato paste.
  5. Cook for another minute, stirring well.
  6. Add tomato sauce, chicken broth and pasta.
  7. Bring mixture to the boil and then cover, reduce heat to medium and cook for 12 – 15 minutes or until the pasta is tender.
  8. Season with salt and pepper.
  9. Turn grill to high.
  10. Ladle soup into heat safe bowls and top with 2 tablespoons of ricotta cheese, a handful of mozzarella and a sprinkle of parmesan.
  11. Grill for 2 – 3 minutes or until cheese is melted and golden.
  12. Finish with freshly chopped parsley.
