Parmesan Crusted Turkey

Panko Breadcrumbs make this easy recipe crispy on top, while fat-free mayonnaise makes it moist. There aretwo recipes for you to try the first one uses chicken and the second uses turkey so you can go for which ever one you prefer or try both!

 

Lower Calorie Turkey Cutlets with Parmesan Bread-Crumb Crust

Ingredients

  • 8 (4 oz) turkey breast cutletsolive oil
  • 4 egg whites, beaten
  • 3/4 cup seasoned breadcrumbs
  • 1/3 cup Parmesan cheese
  • salt and fresh pepper
  • 2 tbsp butter
  • 2 tsp olive oil
  • lemon wedges for serving

 

Method

  1. Heat oven to 250°.
  2. Season cutlets with salt and pepper.
  3. Combine bread crumbs and Parmesan cheese in a medium bowl.
  4. In another bowl beat egg whites.
  5. Dip turkey cutlets in egg whites, then breadcrumb mixture, shaking off excess.
  6. Heat a large nonstick frying pan on medium heat.
  7. Add half of the butter and olive oil. When butter melts, add 4 cutlets and cook a few minutes on each side, until golden brown and cooked through.
  8. Set aside on a baking sheet and keep warm in oven.
  9. Add remaining butter and oil to frying pan. Cook remaining cutlets.
  10. Serve with lemon wedges.
