Low Fat Fruit Loaf
This is a delicious low fat version of malt loaf. This cake is a healthier option than your usual cake recipe thanks to the genius addition of Weetabix to the mix. The fibre-rich cereal is balanced out with fruit which reduces the amount of sugar.
Weetabix Cake
Ingredients
- 2 Weetabix
- 113g sultanas
- 142ml skimmed milk
- 142ml water
- 113g self-raising flour
- 1 teaspoon mixed spice
- 14g artificial sweetener
- 1 egg beaten
Method
- Put weetabix and sultanas/raisins in a bowl and add water and milk.
- Let the mixture soak.
- Then mix in flour, spice, sweetener and egg
- Get a small loaf tin and grease.
- Add the mixture and let cook in a 180° pre heated oven for approx 1hr 15 minutes.
