Low Calorie Strudel

Try two delicious strudel recipes, the video shows you how to make a delicious apple strudel in minutes, using filo pastry as your flaky crust. The filling is simple and delicious, but you can add extras to make it taste even more like apple pie. The second recipe has jewel-coloured fruit in crisp pastry. And it’s low-calorie!

 

Rhubarb & Strawberry Strudel

Ingredients

  • 400g/14oz rhubarb, trimmed and sliced
  • 1tbsp caster sugar
  • 350g punnet of strawberries, hulled and sliced
  • 4 sheets of filo
  • 25g/1oz reduced-fat spread, melted
  • Dusting of icing sugar for topping

Method

  1. Preheat oven to gas mark 6/200C (180C in a fan oven).
  2. Add rhubarb to a pan with a little water and sugar.
  3. Simmer gently until just tender, 2 – 3 mins.
  4. Drain well and put fruit to one side to cool.
  5. Lay out filo on a lightly-oiled baking sheet.
  6. Spoon rhubarb down centre and top with strawberries.
  7. Fold each sheet of pastry over and fold ends.
  8. Turn so sealed edge is on underside.
  9. Make a few slashes along top, then brush with spread.
  10. Bake until golden, 25 – 35 mins.
  11. Remove and leave to sit for 10 mins.
  12. Slice and serve with a low-fat crème fraiche.
