Lemon Salmon & Spinach Potatoes
Try this simple way to prepare Salmon that is guaranteed to be moist and delicious. As a basic guide to calories in salmon, 100 g of skinless salmon fillet is 116 calories. You could even use different herbs and seasoning if desired. The video recipe shows you how to make Lemon Baked Salmon and the second recipe is grilled salmon flavoured with lemon and served with creamy spinach new potatoes.
Lemon Baked Salmon
Ingredients
- 400 grams new potatoes, halved
- 4 salmon fillets
- zest and juice of 1 lemon
- 1 large handful of fresh spinach
- 45 mls crème fraîche
- salt and freshly ground black pepper
Method
- Preheat the grill.
- Meanwhile, simmer the new potatoes in salted water for 8 – 10min until tender.
- Put the salmon fillets on a baking sheet. Season and sprinkle over the lemon zest and juice.
- Grill for 8 – 10min until salmon is just cooked.
- Drain potatoes, tip back into pan and add the spinach and crème fraîche.
- Season, then heat for 1 – 2min until crème fraîche is hot and spinach is starting to wilt.
- Divide the salmon between four plates and serve with the spinach potatoes.
