Hot Tuna & Cheese Sandwich

If you enjoy the classic, toasted sandwich-style tuna melt a great deal, this open face version is a little easier to make. Tuna melts are so simple and delicious. They are basically tuna salad on a piece of bread topped with some cheese. In light of this, you simply make up your favourite tuna salad, put in on your favourite bread, top in with your choice of cheese, slip it in the oven for 5 minutes, and you’re ready to serve. Tease your taste buds with this tempting tuna melt. Delicious enjoyed for lunch, dinner and supper.

 

Slimming World Tuna Melt

Ingredients

  • 2 spring onions
  • 60g canned roasted red pepper, drained
  • 2 slices wholemeal bread from a 400g loaf
  • 85g tinned tuna in water, drained
  • Freshly ground black pepper
  • 25g Cheddar cheese, grated
  • 1 level tbsp extra light mayonnaise

Method

  1. Trim and finely slice the spring onions.
  2. Rinse the red pepper and pat dry, then cut into thin strips.
  3. Mix the tuna and extra light mayonnaise and smooth onto
    one slice of bread.
  4. Top with the spring onions and red pepper and season with black pepper.
  5. Sprinkle over the cheese and then top with the other slice of bread, pressing down gently to seal.
  6. Preheat the grill to a medium setting. Place the sandwich in the grill pan, and toast the sandwich for 2 – 3 minutes on each side, until the cheese has melted. Make sure the bread is not too close to the heat otherwise the bread will toast quicker than the cheese melts.
  7. Cut in half and serve immediately with a crisp salad.
