Healthy Salmon Pasta
Here we have a quick and easy Slimming World pasta dish that you can make in about 20 minutes. Really good reheated or cold for lunch boxes! This would also be really nice with pieces of cut up bacon instead of salmon.
Lower Calorie Creamy Salmon Pasta
Ingredients
- 5 oz Salmon fillets
- 11 oz Dried pasta
- 4 Tablespoons Cream Cheese
- Asparagus and Broccoli (or whatever green vegetables you like)
- Fresh Dill
- Lemon Juice (preferably a fresh lemon)
- Fish stock cube
- Salt and Pepper
Method
- Preheat oven
- Place the salmon in foil
- Add a dash of lemon juice
- Add olive oil and pepper
- Wrap into a parcel
- Cook for 16 minutes
- While the salmon is cooking, chop the vegetables and put them into a pan
- Boil a kettle of water and cook the pasta according to the instructions on the pack
- Chop the dill
- Put the vegetables on to cook
- Add half a fish stock cube to 100ml boiling water and stir
- Bring stock to a simmer in a pan and add 1tbsp cream cheese
- Stir this until combined and smooth
- Add the Dill and lemon zest
- Reduce the sauce until it thickens
- Drain the pasta and vegetables
- Flake the salmon when it is cooked
- Add all the ingredients into a large pan and add the cream
cheese and dill sauce mixture - Mix together and serve
Tip:
Tarragon could be used instead of the Dill.
