French Bean Salad

This warm, French bean salad makes lovely side dish to any main meal. You can serve it with a big plate of vegetable pasta or it would also make a great main course tossed with warm, lean grilled chicken, or topped with a couple of soft boiled eggs.

 

Warm French Bean Salad

Ingredients

  • 4 Handfuls of French Beans
  • 1 Medium onion
  • 2 Medium tomatoes
  • salt and black pepper
  • Fat free salad dressing
  • 1 tsp Balsamic vinegar
  • Fresh chervil or parsley (optional)

Methodonion

  1. Start off by topping and tailing the beans.
  2. Finely slice the onion.
  3. Dice the tomatoes and set aside.
  4. Steam the beans for 4-5 minutes.
  5. While the beans are still hot, mix them with the tomatoes, onions and fat-free dressing of your choice. The warmth will help bring out the flavours of the salad.
  6. Season and sprinkle with fresh chervil or parsley, and serve straight away.
