French Bean Salad
This warm, French bean salad makes lovely side dish to any main meal. You can serve it with a big plate of vegetable pasta or it would also make a great main course tossed with warm, lean grilled chicken, or topped with a couple of soft boiled eggs.
Warm French Bean Salad
Ingredients
- 4 Handfuls of French Beans
- 1 Medium onion
- 2 Medium tomatoes
- salt and black pepper
- Fat free salad dressing
- 1 tsp Balsamic vinegar
- Fresh chervil or parsley (optional)
Method
- Start off by topping and tailing the beans.
- Finely slice the onion.
- Dice the tomatoes and set aside.
- Steam the beans for 4-5 minutes.
- While the beans are still hot, mix them with the tomatoes, onions and fat-free dressing of your choice. The warmth will help bring out the flavours of the salad.
- Season and sprinkle with fresh chervil or parsley, and serve straight away.
