Chinese Salmon Noodle Salad
This is the sort of noodle salad that you can easily throw together in just a few minutes, and pack up for a lovely lunch. Fresh salmon, crunchy bean sprouts and soft noodles all combine beautifully to make a satisfying and tasty dish.
Chinese Salmon Noodle Salad
Ingredients
- 4 salmon fillets
- 2 tsp Chinese five-spice
- 250 g dried egg noodles
- 1 red pepper
- 10 spring onions
- 140 g mangetout
- 2 garlic cloves
- 1 cm piece root ginger
- 2 x 225 g cans water chestnuts
- 200 g baby sweetcorn
- 60 g fresh beansprouts, rinsed
- 6 – 8 tbsp dark soy sauce
Method
- Sprinkle the salmon fillets with Chinese five spice.
- Grill for 10 – 12 minutes until cooked through.
- Meanwhile, cook the noodles for a few minutes, drain and set aside.
- Stir-fry the rest of the ingredients for a few minutes, or until the veggies are cooked to your liking.
- Add the noodles, flake in the salmon, and gently toss everything together.
