Chicken Panini

This sandwich is perfect for lunch or dinner. All you need is a few ingredients and even if you don’t have a panini press just lightly spray the bread with oil and use a George Forman grill and it’s ready in minutes. You could even use a pan on the stove and use a kitchen slice to press it down. The video shows you how to make delicious chicken pesto paninis with veggies and melted cheese built right in.

 

Lower Calorie Chicken Panini with Arugula, Provolone and Chipotle Mayonnaise

Ingredients

  • 1 tbsp light mayonnaise
  • 1 tsp chipotle in adobo sauce (or to taste)
  • 3 oz ciabatta, sliced open
  • 1.75 oz (1 thin) grilled chicken cutlet
  • 1 slice reduced fat provolone
  • 0.5 oz (about 1/2 cup) baby arugula
  • Low calorie cooking spray

 

Method

  1. Combine mayonnaise and chipotle pepper sauce in a small bowl. You can use any hot sauce, sriracha or chipotle tabasco would also work; season to your taste.
  2. Spread the spicy mayonnaise inside the ciabatta.
  3. Lay the provolone cheese, grilled chicken and arugula in the bread; close and lightly spray the top with cooking spray.
  4. Place on a panini press and close until the cheese melts and the bread is toasted.
  5. Cut in half and eat immediately.
