Stir Fried Prawns & Bok Choi

Stir fry is quick and easy to make. Bok Choi are small white bulbous stalks with broad green leaves. They have a subtle flavour and are crisp and crunchy to eat. Popular in Chinese recipes, they can be steamed or stir fried or boiled in soups. The video recipe shows you how to make stir fried shrimp with bok choi and the second recipe is a simple prawn stir fry flavoured with teriyaki sauce and served over long grain and wild rice.

 

Stir Fried Prawns & Bok Choi With Rice

Ingredients

  • 300 grams mixed long-grain and wild rice
  • 15 mls sesame oil
  • 2 heads bok choi, chopped
  • 250 grams cooked shelled king prawns
  • 1-2tbsp teriyaki sauce

Method

  1. Put the rice into a pan with 750ml (1ΒΌ pint) water and bring to the boil.
  2. Simmer for 15 – 18min until the water has been absorbed and the rice is tender.
  3. Meanwhile, heat the sesame oil in a large pan.
  4. Stir-fry the bok choi for 2 – 3 min until starting to soften.
  5. Add the prawns and heat through for 2 – 3 min until piping hot.
  6. Stir in the teriyaki sauce.
  7. Divide the rice among four bowls and top with the
    bok choi and prawns.
  8. Spoon over any sauce and serve immediately.
