Quick Fix Tiramisu

A classic Italian tiramisu is crammed with cream, booze and calories! This version is just as rich and luxurious, but has just a fraction of the calories. It has 3 syns per serving with just the right edge of coffee and chocolate. This is so delicious that it’s hard to believe that it’s so quick and easy.

 

This version of the coffee soaked sponge cake is layered with creamy vanilla fromage frais and and bananas (or raspberries).coffee

Ingredients

  • 170g Ricotta
  • 80g Fat Free Fromage Frais
  • 4 Sponge Fingers
  • Vanilla Extract
  • 4 tbspn sweetener
  • Banana – you could use raspberries instead
  • Cooled strong black coffee

Method

  1. Mix together ricotta, fat free fromage frais, sweetener and vanilla extract – set this aside.
  2. Dip sponge fingers into coffee and place in a dish.
  3. Cover sponge fingers with half of the cheese mix.
  4. Layer with banana or raspberries, then cover with remaining cheese mix.
  5. Chill for 2-3 hours.
  6. Decorate with grated chocolate or cocoa powder before serving.

Serves 2 – 2 syns per serving.
