BLT Pasta Salad
This cool and creamy bacon, lettuce and tomato pasta makes a terrific side dish for summer parties.
You can decide which pasta you prefer to use and if you are on a gluten-free diet you could use brown rice pasta instead.
Lower Calorie BLT Pasta Salad
Ingredients
- 8 oz. corkscrew pasta or any short pasta (or brown rice pasta for gf)
- 4 slices bacon
- 4 tbsp reduced fat mayonnaise
- 2 large ripe tomatoes, diced small or 1/4 cup canned tomatoes, drained
- 1/4 cup chopped spring onions
- salt and freshly-ground black pepper, to taste
- 2 cups finely-chopped lettuce or 2 cups baby spinach
Tip
Centre cut bacon has less fat than regular bacon, or you can use
turkey or chicken bacon instead if you don’t eat pork.
Method
- Cook the pasta in boiling water according to the package directions. Drain.
- Fry the bacon until crisp. Drain.
- Now place the mayonnaise in a small bowl and add the tomatoes and the chopped spring onions.
- Add some salt and pepper, and stir well.
- Put the pasta in a large bowl.
- Add the spinach or lettuce, crumble in the bacon and then add the dressing. And mix it all together.
- Refrigerate the pasta salad before serving.
