This salad is packed full of protein and bursting at the seams with goodness. Full of texture and zingy fresh flavours, throw in any variety of beans you like and tuck in! Beans and pulses count towards your five a day so they’re a great addition to any salad – and they’re filling too!
- Cooked pasta
- 1 can of mixed beans
- 3 Boiled eggs
- 1 Red onion
- Salt and black pepper
- Spring onion
- Cherry tomatoes
- Fat free vinaigrette
- Put the cooked pasta, mixed beans, cherry tomatoes, spring onion, diced chilli and red onion into a large bowl and mix together well.
- Add the fat free vinaigrette and season to taste.
- Cut the Coriander finely, sprinkle this over the top and then mix all the ingredients together.
- Slice the 3 boiled eggs in half and then put them on the top.
