Arugula, Feta & Watermelon Salad

This is a simple salad recipe that combines sweet watermelon, peppery arugula and feta cheese. This salad is a wonderful surprise because all the ingredients compliment each so well and it’s so pretty to look at too. Give this a try, it’s perfectly delicious with grilled dishes! Easy to make, and tastes great.

 

Watermelon, Arugula & Feta Salad

Ingredients

  • 3 cups seedless watermelon, cubed and chilled
  • 1/2 cup crumbled feta
  • 7 oz arugula
  • 1/4 small red onion, sliced very thin
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • salt and fresh pepper

 

 

Method

  1. Wash arugula and dry well.
  2. In a large bowl whisk vinegar, olive oil, salt and pepper.
  3. Toss with the remaining ingredients and serve.
