Chunky Fish Fingers

If you love fresh, delicious food that’s bursting with flavour but don’t want to pile on the pounds then this recipe is perfect for you. As well as being packed with flavour this is also low in carbs and fat so is perfect for anyone wanting to beat the bulge. This meal is easy to prepare, making it ideal for a quick family feast.

 

Weight Watchers Chunky Fish Fingers

Ingredients

Fish Fingers

  • 6 slices calorie controlled brown bread
  • 400g cod fillets, raw, each cut into long fingers
  • 1 medium egg, beaten
  • 250g peas, fresh or frozen
  • Half a 25g pack fresh mint
Tartare Sauce

  • 2 tbsp lemon juice (juice of half a lemon)
  • 4 tbsp quark
  • 1 tbsp low-fat natural yoghurt
  • 1 tbsp fresh dill
  • 1 tsp capers in brine, drained, chopped
  • 25g pickled gherkins, drained, finely chopped

Method

  1. Put the bread into a processor and whizz to make crumbs.
  2. Transfer to a dish.
  3. Dip the cod pieces in the crumbs to coat, then the beaten egg, then back into the crumbs to coat thoroughly.
  4. Preheat the grill to medium high and grill the fish fingers for 10 minutes, turning once.
  5. Meanwhile, simmer the peas in a pan of water for 3 minutes or until tender.
  6. Drain, then whizz them in a food processor briefly with the mint, until half pureed.
  7. Set to one side and keep warm.
  8. Mix together all the ingredients for the tartare sauce in a bowl and serve with the fish fingers and mushy peas.
