Sausage & Tomato Spaghetti

These recipes use Italian turkey sausage with pasta and a simple sauce. The first recipe is slightly higher in calories than the second one but this versatile Italian dish goes from stovetop to table in less than 30 minutes, no matter which one you decide to try! Serve with a salad for a filling weeknight meal.

 

Lower Calorie Spaghetti With Sausage And Simple Tomato Sauce

Ingredients:

  • 1 lb lean Italian turkey sausage, casings removed
  • 28 oz can crushed tomatoes
  • 1/4 cup fresh basil, torn
  • salt and pepper to taste
  • 1/2 cup fat free ricotta
  • 16 oz uncooked whole wheat, high fibre or low carbohydrate pasta

 

Method

  1. Remove the casings from the sausage and saute in a deep frying pan.
  2. When browned and cooked through, add crushed tomatoes.
    Add salt and pepper to taste.
  3. Cover and simmer on low for about 10 minutes.
  4. Add basil and ricotta and simmer another 5 minutes.
  5. Serve 1/2 cup sauce over approx 1 cup (2 oz dry) of your favourite cooked whole wheat, low carbohydrate or high fibre pasta.
