Chocolate Gingerbread Pudding

If you are looking for a dessert option that is lower in fat and sugar this recipe could be just the thing for you. This recipe is based on banana and cocoa powder, and has ground flax for an omega-3 boost.

 

Low Fat Chocolate Gingerbread Pudding

Ingredients

  • 2 bananas
  • 2 Tbsp ground flax seeds
  • 1/4 cup (more or less) water
  • 2 Tbsp carob or cocoa powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 small piece fresh ginger, grated (or 1/4 tsp ground ginger)
  • 2 Tbsp hemp protein powder (optional)
  • 1 tsp molasses
  • 1 Tbsp nut/seed butter

Fresh ginger is fantastic because it can soothe an upset
stomach and even boosts your digestive system.
Mixing molasses with chocolate adds flavour and it has
lots of iron and B vitamins.

 

Method

  1. Put all the ingredients in a food processor or blender, and puree until smooth.
  2. You can also mash the bananas with a fork or potato masher if you don’t have a blender.
  3. Chill the pudding before serving.
  4. Top it with chopped almonds, coconut or whatever else you like.
