Papaya Boats

Forget washing dishes and use a juicy papaya as your breakfast bowl. Layer in Greek yoghurt with crunchy toppings like granola and chia seeds for a nutritious start to the day. This is a simple treat with a delicious edible bowl and would be perfect for breakfast, lunch or dinner.

Ingredients

  • 1 papaya
  • 1 cup Greek yoghurt
  • 9 blackberries
  • 5 blueberries
  • 3 raspberries
  • 1 tablespoon chia seeds
  • 1/3 cup toasted coconut
  • 1/2 cup granola

Method

  1. Slice your papaya in half, lengthwise.
  2. Scoop out the centre including all the seeds.
  3. Fill the hollowed centre of your papaya with Greek yoghurt.
  4. Layer the berries, chia seeds, toasted coconut, and granola over the yoghurt base.

The possibilities are endless.
Choosing a bowl is half the fun, buy your favourite fruit (watermelon, pineapple, and cantaloupe work too), scoop out the seeds, and fill it with your favourite fruits and a variety of granola mixes to top the yoghurt.
